PIE!

Tis the season and I know of many people looking for one of these.

Tasty Pasty

4 1/2 c. flour
1/2 tsp baking powder
3/4 tsp salt
1 tbsp brown sugar
1 cup lard (yes it must be lard)
1 cup crisco (veggie shortening)
Combine until crumbly (cut in lard/crisco until grape sized chunks. not too fine.
the less you work this dough the better.

1 unbeaten egg
1 tbsp white vinegar
add milk to make 3/4 cup of mixture.
beat lightly.

Add wet to dry and mix slightly. you want the lumps but not a lot of flour showing.
chill slightly (10 min, or more) think of it as time to do dishes..:)
Ready to roll! can make 3 double crusts(lattice) or 2 Large gluttonous pies.
Tip: don't roll out the dough more then 3 times or it goes tough.

Prize Pumpkin Pie

1 1/2 cups canned pumpkin (12 oz)
(make sure you buy pure unspiced,..read the ingredients to be sure)
2 tbsp flour
1/2 tsp salt
1/4 tsp ground ginger(fresh or not)
1/2 tsp ground nutmeg
1/2 tsp cinnamon
1/3 cup brown sugar
1/4 cup maple syrup
1 cup scalded evaporated milk
2 eggs well beaten

pour into pie crust and bake at 450 for 10 min. Reduce temp to 325 and bake for 30-40 min longer.

Now I didn't mention to preheat the oven because I didn't think I'd need to. Also a water bath can help with the cracking if you have a dry house. If you need to know how to do a water bath, it's easy. /google..:)

I also have a magnificent apple pie recipe. ask if you want that too.

EDIT: for those that wrote down this recipe, the milk has been changed to 1 cup, I had problems reading the photocopy, and had to get the original to tell.
