tonight i cooked a mexi-soup-ish kinda thing in the crock pot.
it's basically my own version of tortilla soup but I have titled it "Fiesta Pantry" in honor of cleaning out the pantry for ingredients.
here's the nitty-gritty:
1 can of diced tomatoes--undrained
2 cans of beans (I used northern white and kindey beans...didn't find any black beans in the pantry ;-p)--undrained
1 can of corn (or use half bag of frozen if you'd like)--drained
1 can of vegetable broth
a couple garden tomatoes if you got 'em (if you need any, let me know, we have millions)
1 pkg of uncle ben's instant rice
like an ounce or so of red onion
cup of mexican shredded cheese
tortilla chips
and 1 packet of Taco Seasoning (Ortega or whatever)
quite simple--empty contents from cans into crockpot. add chopped up onion and tomatoes. cook rice via microwave directions ( i believe it's a 90 second wait haha). dump in taco seasoning. cook in crock pot for however long you want on whatever setting, as long as it gets nice and hot! laddle into bowls, garnish with cheese and crushed tortilla chips...AMAZING!
now i've left out some secret ingredients...that's where you can improvise on your own. for example, i would have thrown in some green pepper but we aren't growing that this year or they just aren't ripe yet. who knows. that and my mom despises green pepper so i had to make it to her liking. i mean what fun is it to make a lifechanging dish without feeding your family? no fun at all!
