super awesome pasta sauce

*red pepper-sweet basil tomato sauce*

ingredients:
1/4 cup olive oil
2 tbs butter or 1 tbs ghee
1 tsp hing/asafoetida
1 tsp methi/fenugreek seeds [optional]
1 medium red pepper diced
8 medium tomatoes, boiled, skinned, and diced.
3 tbs chopped fresh basil
1 tsp black pepper
2 tsp salt
1 tbs tomato paste

procedure:
1. heat oil + butter over medium heat. when warm, add hing and methi seeds and sizzle for 30 sec
2. saute red pepper for 1 min
3. add the rest of the ingredients except the paste, bring to boil, reduce heat, and simmer half-covered for 45 min
4. stir in tomato paste [it thickens the sauce] and simmer for another 15 minutes
5. serve with angel hair, yum!

finally, success! i've been trying for a long time to make a sauce that's actually good as opposed to "edible."
