Turkish Delight Sorbet

Friday night, to go with M's amazing slow-cooked lamb roast, I made this delightful sorbet. I had heard about a mix of mint, halva and pistachios, but could not find halva that night, so thought a turkish delight theme would be interesting. Here is the result, very yummy, although I liked less rose essence than M:

1 Tub Herdies dairy-free chocolate sorbet
2 large stems fresh mint leaves, striped, washed and chopped
100g pistachios
0.5 teaspoon rose-essence (I used 1-teaspoon initially but I think it was too much, although Mikey didn't)
0.25 cup honey (heated until liquid)

1) Roast pistachios (I used a dry pan)
2) mix all, then return tub to the freezer.

100g grated dark chocolate could really add to this.
