Forgotten Cookies

I saw this recipe last year on TV. A coworker made them for a morning tea and they were delish. I've tweaked the recipe a bit and made these for Christmas gifts this year.

Cookie-wise they are one of the easiest and cheapest recipes I've made. And DE-LISH. I added cranberries to it and I think those were really nice but it does increase the cost so you can add or leave out.

The recipe says it makes about 16 but I over-whipped the eggs to *very* stiff peaks and made smaller ones so made about 2 dozen. The recipe is pretty easy (if you have an electric mixer) & quick so makes it perfect for gifts any time of the year or to make up for a bakesale or take to a party.

Forgotten Cookies

Makes 16

-2 egg whites, at room temperature
-120g castor sugar (1/2 cup)
-Pinch of salt
-1 teaspoon vanilla
-120g roughly chopped almonds (about 1/2 cup; can use macadamias, pistachios, walnuts or other nuts)
-150g chocolate chips or dark chocolate chunks (about 3/4 cup but this was a bit much so maybe reduce it)
-(you can also add about 1/2 cup dried cranberries--chop roughly and also chop finely about 1/2 a handful for garnish)

Step 1 Preheat oven to 180°C/approx 256F. Beat egg whites and salt until foamy.

Step 2 Gradually add sugar and continue beating until they hold stiff peaks and make a glossy, stiff meringue. Add vanilla, almonds and chocolate chips.

Step 3 Cover baking tray with baking paper. Drop teaspoonfuls of the mixture on to the paper. Put in oven, then turn oven off. Leave overnight in oven (or for at least 3 hours, until the oven is cold) with door closed.

For Xmas Gift: Pack the cookies into gift boxes with tissue and gift tag.
