Today we are having...spicy tomato-ey tofu jambalaya!

2½ cups water
2 Tbsp sesame oil
box of Zatarain's jambalaya
1-12 oz package Mori-nu Lite Extra Firm Tofu
1-6 oz can tomato paste
lots of sliced jalapeños, to taste

Prepare according to directions, subbing sesame oil for vegetable oil and tofu/tomato paste/jalapeños for meat. Serve with Club crackers, because they're just about the best crackers in the world.
