Udon's Redemption

Funny how everyone started carrying udon noodles all at once. Apparently, NW Ohio just woke up and realized there were better noodles out there.

So, now we have udons without flavor packets. But boy, are the instructions off. They say to boil for 13-14 minutes -- I boiled mine for 6 and change (partly because the pan boiled over a little) and they're just right.

G'naa...udon noodle salad, inspired by my sister's pasta salads. Those 10 oz of noodles, a double batch of wasabi viniagrette (a single batch is 1/3 C rice vinegar, 2 Tbsp sesame oil, and 2 tsp powdered wasabi), and 4 oz shiitake mushrooms (drained and rinsed). Nummy!

Should've gotten some of those baby corn-cobs, though, those would be good in this too.
