Make a pot roast

Dust off your crock pot and spend 10 minutes preparing a roast.
Big cuts of cow are perhaps a twice a year thing around here. But, when I saw that the grass-fed roasts were on sale, (making them just a little bit more expensive than conventional cow) I grabbed one and did the thing that required me to fuss with it the least.

Ingredients-
one roast, get the cheapest cut, as the crock tenderizes the toughest meats.
salt and pepper
one large yellow onion
potatoes
baby cut carrots

Method-
get a pan really hot with a tiny bit of oil, sear the roast on all sides using tongs, spatulas and chopsticks to awkwardly flip it. add salt and pepper to all sides. try to look like you know what you are doing, the roast may sense your fear.
Transfer the roast to your crock pot, slice the onion into fat rings and drape artistically on roast, cover and cook for 8 hours on low or 4 hours on high. You can add all the veggies now too, but I like to wait until about half way through the cooking time so the potatoes don't get mushy.

At serving time check the roast with a meat thermometer to be safe. Transfer to plate and fish vegetables out of beef fat. MMMMMMM beef fat.

Serve with green salad and soft rolls.
