Good dinner tonight- taking advantage of the awesome early summer cool evenings, we broke out the grill and the foil packets to make this....
Cajun Sausage and Beans
1 can black beans, rinsed & drained
¼ tsp. Cayenne pepper
2 tsp. Cajun seasoning
1 can pinto beans, rinsed & drained
14 oz Healthy Choice or other light smoked sausage, cut into 16 pieces
11 oz mexicorn (I used frozen super sweet non-mexicorn and added a half a can of green chiles)
4 sheets reynolds wrap
Combine first 6 ingredients. Put 1/4 of mixture onto each foil piece then
bring up sides to form packet. Grill 12-14 mins in covered grill or bake 18-20
mins.
Yield: 4 servings= 8 pts., 392 cals, 8g fat, 12g fiber
we also made corn muffins and wilted some spinach and garlic- It was awesome and super easy.
