We've been having Emily B. over Thursday nights to watch Dr. Who (We are catching up on the current season - no spoilers!) The nice thing about this is it's an excuse to cook dinner. I mean - we have a guest! We haven't exactly been taxing the cooking equipment, lately. Hey, we're busy!
I threw together a meat loaf last night. Like all my 'recipes' I kinda made it up as I went along, but here it is. I call it "Harvesty Meatloaf"
1 pound ground beef
2 eggs
about a cup of matzoh flakes
about a cup of shredded butternut squash
2 cups diced mushrooms
1/2 a medium yellow onion, diced finely
6 cloves garlic, diced finely
two dashes of Old Bay, one dash paprika, 4 healthy dashes of cardamom (I love cardamom), one dash curry powder, one dash rosemary, one shake of salt, two shakes of pepper.
Mix all with hands until of consistent texture, pat into bread loaf pan, spread barbecue sauce on top, just to cover. Bake at 350 until a fork inserted in the center comes out clean. Like... 40 minutes? ish?
Slice and serve with mashed potatoes. Makes enough for 5-6 people, or four with leftovers. :)
Though I have been making meatloaf for multiple decades now, this was my first time not using any of my favored 'cheater' ingredients - no campbell's cream-of soup, no leftover mashed potatoes or rice. No leftovers at all! But it turned out firm, tasty, and savory. Just the way I like my meatloaf.
