Last night, I picked a fresh tomato, chopped it up with some onion, garlic, fresh oregano and basil from the garden; added olive oil and a wee bit of basalmic vinegar, stirred it up and put it in the fridge overnight to blend.
Yesterday I also mixed up generic
refrigerator bread dough. This morning I got up, hacked off a boule sized chunk, and set it on the counter to rest while I showered and the oven preheated. I then tossed it in my cast iron dutch oven in the big oven for half an hour while I dried my hair, got dressed and ready for work. When the fresh bread came piping hot out of the oven, I sliced three slices; spooned my tomato mix over top, sprinkled it with cheese, and put it back in the still hot oven to warm and melt the cheese.
Then I ate it. For breakfast.

I love this time of year.
