Enchiladas

I thought I would share my favourite enchilada recipe. It takes a little bit of time to make but it is unbelievably worth it. Enjoy!

Bean and Brown Rice Enchiladas

Ingredients:
•4 tortillas
•grated cheese
•olive oil

Filling
•½ can red kidney beans
•½ can of lentils
•¾ cup of brown rice (rinsed)
•½ pack of burrito seasoning mix
•approximately ¾ - 1 litre of water
•½ onion, chopped

Sauce
•tin of chopped tomatoes
•½ jar of tomato passata (my jars are 690g)
•1 clove of crushed garlic
•2 tsp chilli sauce or one small chilli finely chopped
•cumin, coriander & burrito seasoning mix to taste
•2 tbsp smooth ricotta

Directions:
•Dip tortilla in sauce and then fry lightly for about 10-15 secs on each side, layer with paper towels and cover to keep warm.
•Cook onion till slightly browned, add kidney beans, lentils, rice and burrito seasoning mix. Mix together well, then add water. Simmer covered for approximately 30 minutes until rice is cooked adding water necessary.
•Put all sauce ingredients in to a saucepan, cover and simmer till everything else is ready, adding seasoning to taste
•Place a quarter of the filling in the middle of one of the tortillas. Fold in the ends and roll to make a package and place in a baking dish. Repeat with the other 3 tortillas.
•Pour remaining sauce over the packages, top with cheese and grill until cheese is melted.
•Serve with guacamole, lettuce and tomato drizzled with lemon juice and sprinkled with fresh coriander.
