I found this recipe years ago on savvyvegetarian.com and have since tweaked it a bit. It's my go-to crockpot curry and tastes fantastic everytime so I thought I'd share it with you all.
Crock-pot chickpea curry
Ingredients:
•1 onion
•2 cloves garlic
•1 inch ginger
•1 tsp cumin
•1 tsp coriander
•1 tsp turmeric
•½ tsp salt
•1 tsp chilli flakes
•1 can chickpeas
•1 can diced tomatoes / ¾ jar passata
•1 sweet potato, diced
•1 carrot, diced
•handful of cauliflower
Directions:
If you want, cook the onion, garlic and ginger in a frypan, add your spices and let it toast for a minute or two and then add to the crockpot with all the other ingredients. It will add a bit more depth to the flavour but if you're running low on time, feel free to leave out the pre-cooking and just throw everything in the pot (I've done that a number of times and I'm always happy with the result). Cook in slow cooker for 6-9 hours on low then add the following in the last half an hour
•½ tsp garam masala
•handful of green peas.
Serve with rice and naans
