I have been looking everywhere for coconut butter like you have-- I think it's going to have to be ordered online because I can't locate any here. I do have coconut oil, though.

It looks like we've come to a lot of the same conclusions-- xanthan gum is really weird stuff and I find that it can get gummy quickly if you add even slightly too much! I've been using a combo of brown rice flour, sweet rice flour, tapioca flour, potato starch, amaranth flour and sorghum flour, depending upon the recipe. The ground flax is also something I've been using a lot, especially in muffins/breads. Have you tried making your own almond meal or do you buy it pre-ground? I have seen it but have not tried any yet (it's pretty expensive at my health food stores). I've been avoiding the oats so far and need to order some buckwheat from that link you sent me!

I found a pretty good bread recipe but it has a lot of egg in it... 2 whole eggs and 2 egg whites. So not sure if that is something you can work around or not. I also have a great GF sugar cookie recipe (also with some eggs) that I'd be happy to share if you're up to playing with it!

Did you know that some toothpastes have gluten? I didn't until reading it in Gluten-Free Girl (the book). That was a shock to me!

I buy my almond meal pre-ground.

How do you like the amaranth flour? I'd have to buy online, so I am curious what you think before I do. :)

For cooking/baking, I actually find coconut oil to work better than coconut butter. I like the coconut butter to spread on toast (mixed with a little pumpkin and honey is DIVINE) or mix in hot cereals. I have used coconut butter with success in pre-mixed cookies, but sometimes it fails and I have NO idea why.

I'd love any recipes! I find egg pretty easy to work around, actually. :)

And, ummm, I had NO idea about toothpaste. Argh! Scary. I am going to have to research mine now.

As for coconut butter, here's my favorite thing in the world. Serious.

I do like the flavor of amaranth flour a lot, but it is one that MUST be mixed with at least two other flours. I made the mistake of using more of it than rice flour once and it was a sticky disaster! I would recommend buying a small bag to see what you think. :) (here's where I get mine)

If eggs aren't so bad then I do have some recipes to send you! Hopefully tomorrow.

I use Stevia Clear brand... (don't buy it on that sight but it's helpful to see what the bottle looks like).

My sister and I tried some GF cookies the other day that were sweetened with date paste-- don't know if you've tried that, but it gave a very rich, complex sweet flavor. Definitely something to play with!

I just ordered that Stevia off of amazon...thanks!! 8oz for $25 which is great if I end up liking it. :) If not, I'll mail it to you. ;)

I've been looking for date paste, actually. I want to play with it! :)

I promise that I *will* send you some recipes! I've been flailing about trying to follow what my to-do list tells me needs done. Damn list is too long. ;)

Let me know if you find some date paste-- I've not been able to find any, even online. I did find some recipes for making it, though, so I might resort to that.

Ooh, yes, I have seen that site! I used her flatbread recipe a couple of weeks ago and it was divine.

Also, I thought of you when I saw this the other day:
pumpkin-stuffed french toast

I found a GF pie crust recipe and will email it to you tomorrow... have not tried it yet, but I plan on doing both pecan and pumpkin pies for Thanksgiving so I need to do a trial run. Darn. PIE.
