Help!

Anyone know any good recipes for butternut squash?

I bought one yesterday and havent really got much of an idea of what to do with it!

Bake it till it starts browning the skin. Then chop of the head (the narrow end) and scoop out the insides, which should be easily mashed, with butter. Yum. -Elle

Finely chop several cloves of garlic and one large onion. Fry in olive oil til soft. Dice butternut squash, peeled potatoes, carrots, whatever root veg you like. Add to pot and fry a bit longer. Add vegetable stock and herbs of your choice. Simmer til veg is soft. Mash with a tattie masher (for a chunkier soup) or blend if you want a smooth soup. Serve with crusty...bread.

its delicious roasted too.
put it in a roasting pan along with some chopped garlic, olive oil, red onions, carrots, and whatever other veg you can find. roast for 30-40 mins.

my father just uses butter and cinnamon and some brown sugar whenever we make it at the house.....try recipes.com
