Prosciutto Gruyere Turkey-burger with spring mix and onion on a gluten-free bun.

All the usual ingredients (except the onion) are replaced by something either slightly more environmentally-friendly or slightly more expensive.

Californians can be a little arrogant about their cooking, sort of like the French are.

The French aren't really arrogant about their cooking, at least those I got to know in several holidays and in my personal circle of friends, they simply have a whole ... different approach to food. Amelié for example would be simply SHOCKED about the suggestion that a dinner is shorter than an hour :D

But as for the environmentally-friendly ... well, i don't know how it's over there, but here it's by now just another way to say "Look, it's ... biological and shit. So please give me 5$ for that one litre of milk" (no kidding, a bio-envoiremental-store around here sells milk for ~5,2$ per Litre, and the cafe next dore with it's bio sortiment carges 4$ for a scoop of their bio-ice-cream. And believe it or not, it sells!)
