I didn't have a lot of time to cook over the weekend because of work, but I did make the Barefoot Contessa's Roasted Leek and Potato Soup and it is VERY good. We're going to freeze the rest of it for later ( Read more... )

My puppies were alternately made cranky and overjoyed at the snow. It depended on how much they wanted to play versus the serious business of walking.

What recipe did you use? I really liked the leek flavor in the soup.

I don't even follow a proper recipe anymore. It's basically three or four leeks (I use almost the entire leek, save for maybe the last inch or two), a couple of medium-sized potatoes, some broth (say, six cups) and sugar/salt/pepper. I usually add a fennel (or two, if tiny) and some white dry vermouth, but those are optional. Saute the leeks with a (very) little bit of sugar and a little salt, add the potatoes, add the broth (and vermouth), bring to a boil and let simmer until the potatoes (and fennel, if using) are tender, then blenderize. Add cream/milk if desired or if it's too thick and adjust seasonings to taste.

They closed us an hour after I got to the office. I stayed another hour or two after that and managed to get a flat tire (a 1/2" building spike through my tire) somewhere around that CVS building site on Pennsylvania Avenue. Two hours, a trip to the tire place, and much cursing later, I made it home.

So much for being the good employee and going in yesterday when 90% of the office did not... *sigh*

Oh wow. That is not good. We never closed, but only 1 paralegal and 2 assistants came in for our group. Almost all the lawyers were there.
