Kevin picked up our second CSA share today, and it looks very promising! And so I don't have a heart attack over hockey right now (ETA: YES, HAWKS WIN!!!!!!!!!!!!!!!), I'm posting about its awesomeness.
Contents Include:
Carrots
Kale
Rhubarb
Asparagus
Strawberries
Red leaf lettuce
Green escarole
So, I'm not in love with MORE KALE and I'm not terribly excited about the escarole (which our CSA lady recommends we saute with garlic and onion then sprinkle with lemon juice). But I suppose this is my burden to bear. *ridiculously over-dramatic sigh*
I am, however, really excited about the carrots, rhubarb, strawberries, and asparagus. The strawberries look delicious enough to eat as-is, so no fancy recipes there.
I feel like I *should* have a fancy recipe for asparagus, but I like it in any form--including the pretty plain ones--so I'm not searching for some way to gussy it up. Kevin and I made some
lemony zucchini pizza tonight (which is omg, you must make it now levels of awesome), which means we have another pizza worth of dough leftover, so I'm thinking if I need an actual fancy way to prepare asparagus that I'll make a
shaved asparagus pizza.
Rhubarb is always very exciting, but now I'm trying to challenge myself to move beyond the dessert uses of rhubarb and into savory uses. I've seen (and now can't find) a recipe for pork tenderloin and rhubarb, which seems seriously delicious. I also have a recipe for a
savory rhubarb lentil dal that I'm trying to convince Kevin to try. But most of all, I'm flirting with a seriously compelling
Rosemary Lemon Rhubarb Spritzer. It looks so refreshing, and I'm imagining it with a little vodka, gin, or prosecco.
Finally, we have the carrots, which are my crowning glory this week. I'll eat carrots in pretty much any configuration (except for raw with ranch dressing, and that is mainly a criticism of the dressing), but I really, really want to make a carrot salad. I have this
basic carrot salad recipe, which sound delicious. But I'm particularly fond of the
carrot salad with harissa, feta, and mint, so I'm trying to find harissa somewhere so I can guarantee my place in carrot salad heaven.
So, as always, any advice is welcome. Have at it!
