Ingredients:
1 potato
1 sausage
1-2 cups assorted frozen vegetables (Kroger "Fiesta Mix" is a good bet if you don't freeze your own)
1-2 tbsp vegetable oil
Directions:
Heat oil in a frying pan on medium heat.
Wash and thinly slice the potato, leaving the skin on. Cut the sausage into 1/8- to 1/4-inch slices.
Fry everything with enough frozen vegetables to fill out the pan. When the meat is cooked (assuming you're not using pre-cooked or veggie sausage), and the potatoes are crispy on the outside and clear in the middle, you know you're done.
Notes:
Generally, I keep sausage frozen until I'm ready to use it, and then break one off and thaw it in the toaster oven. I don't heat it all the way- just enough that I'll be able to slice it without sawing through a frozen block. If you let it warm up too much, it'll get mooshy and hot and be even harder to cut.
