This is one of my favorite songs of all time partly just because it's so beautiful with an interesting narrative but also because its the first song I ever heard where a woman was singing about loving another woman "Remember me to my love, I'll know I'll miss her" I didn't know then that it was a cover or that it was originally written and sung by a man. I was thirteen when I first heard it and fell in love with it and I forgot the name of the band and the name of the song. I just remembered forever snatches of the lyrics and when the internet became a place that made searches with such scant info possible I refound and completely fell in love with the Cowboy junkies.

I don't know if this counts as a cover as folk songs are traditionally "reworked" or reinterpreted" but I love it anyway and the whole album (Blackout) blew me away.

This isn't technicaly a cover either as the original artist performs on it but it is a beautiful reworking of an already beautiful song
