Salt-crusted Roast Chicken
Originally uploaded by Ragnvaeig. A 2 kg bird is plenty for the two of us, it seems. I'm a weird critter about using things up, so I rubbed this chicken with the salt from the bottom of the pretzel bag (and cracked peppercorns) after I stuffed it. I think it turned out well.

I saved the schmaltz and dismantled the rest of the chicken before putting the carcass in for stock. I'm thinking matzoh ball soup might be in order.
