Because
subvers asked so nicely demanded that I share my recipes for Hot Chocolate and Creme de Cacao Balls, I decided to make it a real post so that everyone on my Flist could enjoy. I obviously have several recipes for AUTHENTIC Hot Chocolate, NOT COCOA (you know, that powdered mix stuff people call hot chocolate). The first recipe is family/child friendly, the second one has an alcoholic kick that is always good, and the last is a recipe that uses White Chocolate and the alcohol is optional. The Creme de Cacao Balls do have the Creme de Cacao liqueur in them and because they are not baked they will make you drunk if you eat enough of them, so you have been warned. :) Enjoy!!
My Favorite Hot Chocolate
Makes: 4-5 Servings
2 1/2 cups whole milk
2 cups half-and-half
4 ounces bittersweet or semisweet chocolate, chopped
4 ounces milk chocolate, chopped
1 tablespoon sugar
1 teaspoon pure vanilla extract
4 to 5 peppermint sticks, for garnish
Heat the milk and half-and-half in a saucepan on medium heat to just below the simmering point. Remove the pan from the heat and add both chocolates. When the chocolates are melted, add the sugar and vanilla extract and whisk vigorously. Reheat gently and serve immediately. Use a peppermint stick to garnish each serving.
Hot Chocolate with Peppermint Schnapps
Makes: 6 servings
1 quart half-and-half
6 ounces bittersweet, semisweet, or milk chocolate (Whatever is your preference), chopped
9 ounces peppermint schnapps
Whipped cream, for serving
6 peppermint sticks, for serving
Heat 1 cup of the half-and-half in a medium saucepan over low heat. Add chocolate, stirring constantly, until melted. When the chocolate has melted, increase heat to medium and add the remainder of the half-and-half while whisking rapidly. Do not allow to boil.
Serve in small cups fortified with a jigger (1 1/2 ounces) of peppermint schnapps and a dollop of whipped cream. Add a peppermint stick to stir.
If transporting in a thermos, heat thermos up with hot water to get it warm for 1 minute. Pour water out and fill with hot chocolate.
Holiday Hot Chocolate
Will make about: 4-9 cups depending upon size.
Ingredients:
4 cups whole milk
4 cups half-and-half
1 pound White chocolate, chopped
2 teaspoons pure vanilla extract
Seeds scraped from 2 vanilla beans
1/4 to 1/3 cup orange flavored liqueur (recommended: Grand Marnier)
In a saucepan on medium heat, heat the milk and half-and-half to just below the simmering point. Remove the pan from the heat and add the white chocolate. When the chocolate is melted, add the vanilla, vanilla bean seeds, and 1/4 to 1/3 cup orange liqueur, according to taste, and whisk vigorously. Reheat very gently and serve.
and last, but not least
Crème de Cacao Balls
2 ½ cups crushed Oreos
1 cup chopped pecans
1 cup sifted powdered sugar
1/3 cup Crème de Cacao
2 Tbsp. Corn syrup
Sifted powdered sugar for rolling
Mix ingredients together until it forms a nice paste. Scoop out portions of mixture and roll into a ball. Roll ball through powdered sugar and place on a cookie sheet. Refrigerate over night. Then enjoy!!
