About a month ago, I decided that I would try to cook with tofu. I've only had it a few times, but one of the times, it was really good [though the other time it was just bland - but it's SO healthy!!!]...so when I saw it in the store, I figured it couldn't hurt to try it out. I made some fried rice with some of it - I marinated the tofu for about a day or so beforehand - it wasn't bad at all...though I should've "cooked" it a little more, I think. I had about 1/2lb left after that, though - and had no clue what to do with it. Still don't!
So it wouldn't spoil [I would assume it does, at some point, but how would I know?!? LOL], I put what was left into the fridge when we left for my sister's wedding earlier this month. I totally forgot about it until yesterday, when Hans was trying to find all of the leftovers. It sat overnight in the fridge and thawed, but it looked funny when I saw it this morning - a lot more "sponge"-y. It also tastes more spongy, but not bad.
...I guess it just doesn't come back like some foods do.
Any suggestions on how to cook/eat the rest of it?!?!
