Cheese Fondue and Friends.

Many years ago, my mother-in-law gave Tom and I a fantastic gift- an electric fondue pot! It's my go-to tool for many marvellous meals. Soups, tempura, melting chocolate for coating pretzels and fruit, the list goes on.

Last night, though, I'm used it for it's original purpose. Cheese fondue is a very rare treat for us. Let's face it, this stuff isn't health food! Sure, we dip fruits and veggies into that pot of deliciousness, but it's still a whole lot of melted cheese that we are putting into our mouths. That's what makes it so darn tasty.

I look at an electric fondue pot as a magical kitchen appliance. Whatever I throw in, it automatically because mouth-watering. But I wrote down a recipe, just in case. It was quite good.

Cheese Fondue Recipe
Ingredients consist of...
-2 cloves of garlic, minced
-1 cup of white wine. I would recommend against a sweet wine like I had on hand. Don't worry, this stuff boils out so your guests won't be tipsy after dinner.
-8 ounces of Gruyere cheese, cubed
-8 ounces of goat cheese
-1/2 cup of milk
-1/2 cup nutritional yeast
-spices. I used a healthy shake of dried basil, parsley, and onion salt. If you like food that bites back, I bet including a minced hot pepper would be amazing.

Toss everything into the fondue pot, turn out, and occasionally give it a mix. When everything has melted together and is some of the liquid evaporates, dig in! I like to go crazy with the 'dippers.' Cubes of bread, apples, mushrooms, sausages cut into chunks, whatever else I feel would be good covered in cheesiness. This makes a lot, so invite over your friends like we did!
