Hey - I Made a Delicious Soup Tonight!

It was cold as the proverbial witch's teat today, so I made this up. It was good, and also good. Got the veggies in my box from Suburban Organics (try them out if you're in the PA/NJ/DE area)

White Bean and Kale Soup with Chorizo

4 ounces Spanish chorizo*, diced
1 TB olive oil
2 small onions, medium dice
3 carrots, medium dice
3 stalks celery, medium dice
2 cloves garlic, minced
1 15-ounce can diced tomatoes
2 quarts chicken broth
1 bunch kale, rinsed and roughly chopped, stems removed
3 cups cooked canellini beans (or 2 cans, rinsed)
salt and pepper to taste

Heat Dutch oven over medium high heat and add oil and chorizo. Saute until browned, about 3 minutes, and remove from pan with slotted spoon, leaving the fat in the pot. Add onion, carrot, and celery, salt and pepper  to taste and reduce heat to medium. Saute until browned, 15 minutes. Add garlic and cook until fragrant, 1 minute. Add broth and tomatoes and bring to a boil. Reduce heat to low and simmer for 15 minutes. Add kale and beans and cook until kale is tender, about 10 minutes. Serve hot, garnished with the fried chorizo.

* Important to use Spanish chorizo, not Mexican - they are different things (Spanish is fully cooked, Mexican is not). If you can't get chorizo, you can use another smoked cooked sausage, such as kielbasa or andouille.

Heck, make it a vegetarian dish - eliminate the sausage, increase the oil to 3 TB, and use veggie broth. I don't judge!
