Rachel’s Vanilla Crescents

Ingredients

150g plain flour

115g unsalted butter (I used margarine)

2 teaspoons vanilla essence

50g ground almonds or almond meal

2 tablespoons of caster sugar

125g icing sugar

Preheat the oven to 170 degrees and line two baking trays with baking paper

Sift the flour into a bowl and rub in the butter turning the mix into “breadcrumbs”.

Add the vanilla and stir in the ground almonds and sugar. Work the mixture with your hands until it forms a soft dough.

Roll small pieces of dough into lengths about 1cm thick and 5cm long and shape into crescents. Bake for 20 mins until pale golden at the edges/ends.

Remove from baking sheets and cool on wire racks. Roll each of the crescents in icing sugar.

Store in an airtight container for up to 7 days (if you can get them to last that long)
