Tonight was good as far as work went (they put me in the kitchen, flying solo). It was the "real" test, so to speak. The guy who trained me was off today, as was the executive chef and it was our busiest night of the week (and way busier than usual, even for a friday), so I was working without a net (no one to ask a question if I got in a jam). But I got through it with almost no snags and one of the senior cooks even shook my hand on the way out and told me "great job". I was pleased (but geez am I tired!!!)
Three weeks and I have gone from Prep cook to the kitchen proper. Of course I may be in this position for a while since all the others are dead man's boots but that doesn't mean that I can't learn the rest (and that's what this whole thing is about for me anyway).
