Thinking over things, I think maybe I'll also open up my listings to some suggested condiments and toppings to help me get through this month



My Tuna salad sandwich

Start with one can of tuna, add enough mayo to get it to a consistency you like, add to that a spoonful of grated horseradish, one or two spoonfuls of pickle relish, a similar amount of finely chopped onion, and a few finely chopped olives of whichever kind you like. add pepper to taste and serve on a nice soft sliced bread with a piece of lettuce (toasting the bread can be nice too)

Note: For best results I find a well seasoned cast-iron pan is ideal, you may be able to get away with non-stick, but I don't have non-stick pans so I'm not sure on that. Also make sure you use the thinnest spatula you have.

Start off by putting your bread in the toaster, any bread will do, english muffins are really good for this too. Then fry an egg, if you like it messy just leave it at sunny side up. I prefer not to have yolk dripping down my face while eating the sandwich so I flip it over and make sure the yolk has broken so that most of it will be solid. When the egg is done place that on the toast. Here comes the difficult part, turn down the heat on your stove to the point is almost off, take two slices of cheddar or colby cheese, I usually have the chunk type cheese that would be about an inch thick and 3-4 inches tall so adjust accordingly if you have thicker cheese (any cheese with that texture should work) and place them in the pan. The cheese will melt, bubble a bit, and take on a lacy appearance around the edges, after a minute or two you should be able to lift it out of the pan without it falling completely apart. Lay that on top of the egg on the sandwich, add any condiment you would have on eggs or an egg sandwich, let the cheese cool down, and enjoy.
