Yep, another one.

It's...
I Hate to Cook Day!



So, knowing this, what are your plans for dinner? Obviously, the best solution would be to go out, but such can not always be. However, you don't have to go with McDonalds or Ramen either.

I have found some simple recipes that should take no more than one bowl and/or pan and very little time in the kitchen.



NOTE: I take no responsibility for the nutritional content of these meals, the focus today is on avoiding cooking, not health.

Instant Fettucine Alfredo
1/2 cup fat-free cream cheese
1/2 cup fat-free sour cream
2 tablespoons Parmesan cheese
1/4 cup fat-free evaporated milk
2 cups cooked pasta

Combine first 4 ingredients in microwave-safe dish. Heat until warm in microwave. Add additional fat-free evaporated milk or half and half as needed to reach desired consistency. Serve over warm pasta.

Sweet & Sour Microwave Meatballs
1 lb. frozen cooked meatballs, thawed
16 oz. can pineapple tidbits, drained, reserving 1/2 cup liquid
1/2 cup water
2 Tbsp. apple cider vinegar
1 green bell pepper, chopped
1 onion, chopped
2 Tbsp. cornstarch
2 Tbsp. sugar
2 Tbsp. soy sauce

PREPARATION:
Thaw meatballs according to package directions. In a 2 quart microwave safe casserole dish, combine pineapple liquid, water, vinegar, green pepper and onion. Stir in meatballs and cover with waxed paper. Microwave on high for 4-6 minutes until mixture is hot, stirring once halfway through cooking time.

In a small bowl, mix cornstarch, sugar, and soy sauce. Stir well with wire whisk to combine. Add to casserole and stir well. Cover again and cook on high for 4-6 minutes or until sauce is clear and thickened. Stir in pineapple, then cook, covered, again on high for 1-2 minutes until hot and bubbly. Serves 6.

Microwave Ham and Noodle Casserole
1 cup uncooked fine egg noodles
1-1/2 cup diced, cooked ham
2 tablespoons chopped onion
1/8 teaspoon tarragon
2 tablespoon butter or margarine
1 (10-1/2 ounce) can condensed cream of chicken soup, undiluted
1/2 cup French style green beans, precooked & drained
1/2 cup water2 tablespoons bread crumbs

Cook egg noodles; set aside. In 1 1/2 quart micro proof casserole, combine ham, onion, tarragon and butter. Cook, covered, on High (maximum power) 3 minutes. Add chicken soup, egg noodles, green beans and water. Stir. Cook, covered, on High (maximum power) 5 minutes or until hot, stirring once during cooking time. Top with bread crumbs. Let stand, covered, 2 to 3 minutes before serving. Fresh, frozen or canned green beans may be used. Serves 4.
