Cookbook Challenge week 10 assignment
I've been thinking about this one for a couple of days, really. I've been toying with the idea of desserts out of the Moosewood (classic/original), but rebeccafrog pointed out that we just had a desserts challenge on #7 (using fresh fruits).
So, since it's supposed to be really damn hot today (at least according to Minnesota standards), let's explore cold soups. The New Moosewood Cookbook and Enchanted Broccoli Forest both have several recipes. But, it seems that Enchanted Broccoli Forest has been getting quite a bit of attention in my house lately (due to its spinach crust recipe. I managed to use 1.5 lbs of spinach last night by making a spinach, mushroom, garlic scapes and scallion quiche with a spinach crust. I'm feeling rather triumphant because I wasn't sure what the hell we'd do if we had to eat our way through more spinach salads), so if you've got it pick one of the cold soups out of the New Moosewood Cookbook.
