He had tried to be Gabriel Gray again, for parents that weren't his and for her. But after the failed trip to the Bennet house, he realized that Elle still saw him as a monster, Sylar. The flinch proved it and his heart ripped in half. Both of their fates are sealed and he commits an act that marks the end of Gabriel Gray and the re-emergence of Sylar.
"I know."
It's easier being a monster. Being Sylar means being nearly infallible, a true demigod. It also means he doesn't have to feel feelings anymore.
