Pancakes!
Milk - 1.5 cups (375ml)
Lemon Juice - 2tsp (10ml)
Sugar - 2 tbsp (35g)
Self-Raising Flour - 1.5 cups (225g)
Bi-Carb Soda - 1/4 tsp
Egg - 1 large
Butter - 1.5 tbsp (30g)
Small bowl - milk, lemon juice, sugar. Stir to combine, set aside for five mins (may develop a slightly curdled appearance).
Stir flour and bi-carb until well combined.
Add egg and melted butter to the milk mixture. Whisk until the egg has combined w the milk.
Add the milk mixture to the flour mixture and whisk until almost smooth - batter should still have a few small lumps.
Leave batter to stand while pan is preheating (2 mins at least).
