I fired up Mastercook and exported a few recipes we've tried. I make the lentil soup, and also spaghetti sauce, in bulk to freeze. (Spot the vego adaptations! I use liquid smoke flavouring instead of chopped ham or bacon or a ham bone.) Natch, you could use a tangy plain soy yoghurt in place of sour cream of dairy yoghurt.

Corn and Bean Crockpot Soup

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup frozen corn -- or other frozen veg
2 sliced carrots
1 cup mixed dried beans
1 tablespoon each: garlic, chives, parsley, basil
1 6 oz can V8 -- or stock
enough water to fill the crockpot
1/2 cup uncooked macaroni

Cook on high 5-6 hrs till beans are cooked.

Add 1/2 c whole wheat macaroni and cook till soft (20 mins).

Crockpot Lentil Soup

1 litre vegetable juice -- eg V8 Hot and Spicy
1 cup stock
salt and freshly ground black pepper

Put all the ingredients into your crockpot. Cook on low for 9 hours.

Smoky Pinto Bean And Potato Soup

1 medium onion -- chopped
2 medium potatoes -- diced
2 carrots -- thinly sliced
1 celery stalk -- thinly sliced
14 ounces canned pinto beans -- rinsed and drained
28 ounces fat-free broth
2 cloves garlic -- chopped
1/2 teaspoon cumin seed
1/4 teaspoon black pepper
1 teaspoon liquid smoke flavoring -- Mesquite
1 tablespoon white wine vinegar

Combine the onions, potatoes, carrots, celery, beans, and broth in an electric slow cooker. Stir in the cumin, pepper, smoke flavoring, and vinegar. Cover and cook on HIGH until the vegetables are tender. Cooking time: 3-1/2 to 5 hours; based on a 3-1/2 to 4 qt cooker.

Potato and Leek Soup (Crockpot)

4 cups vegetable broth
3 potatoes -- peeled and diced
1 1/2 cups cabbage -- chopped
1 leek -- diced
1 onion -- chopped
2 carrots -- chopped
1/4 cup parsley -- chopped
2 tsp salt
2 tsp black pepper
1/2 tsp caraway seeds
1/2 cup sour cream -- or plain yoghurt

In a large bowl, combine the vegetable broth, potatoes, cabbage, leek,
onion, carrots, and parsley. Pour the mixture into the slow cooker. Stir in the salt, pepper, caraway seeds and bay leaf. Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours. Remove the bay leaf before serving. Combine the liquid from the stoneware with the sour cream in a small bowl. Add the mixture to the slow cooker.
