on defining art?

So this idea came across my head while contemplating the impossible, refining a definition of art. The idea is that there needs to be some sort of multiplicity in viewing or appreciating the work in order for it to be art. A letter can be well composed, but between two people it is not art. A poem in a drawer is art however due to the fact that it has the potential to be viewed by multiple parties. But the letter could be viewed by multiple people as well, though the intent is different.

So anyways, until I figure out the difference that I feel nagging at the back of my mind, I just contradicted myself.
