Have you ever heard a rabbit scream? I have, not until tonight though. I went for a long and fast walk, a big loop away from people and then through a couple neighborhoods that I've only been through once or twice and that are a little sketchy. While walking on this street, through this neighborhood, lost in thought, surrounded by thick shadows, a scream unlike one I've ever heard broke into my consciousness from twenty feet away and to the right, in someones yard, followed by a couple thumps not unlike those of a large bird taking wing, followed by a rabbit bursting from the impenetrable shadow and running directly towards me. My instinct caused me to ruff myself up and look big, and to face slightly to the left of the oncoming rabbit in order to make my kicking foot easily accessible. I'll tell you, those two seconds from the time of the scream to the appearance of the rabbit to the veering of the rabbit away from me felt like two years, time was so slow and I could feel and hear my heart beating and I was aware of so many different escapes routes and potential weapons lying on the ground (not having heard a rabbit scream before I had no idea what to prepare myself for, was it a child being abused?).
I came straight home.
Dinner was fabulous. I whipped up a white sauce extraordinaire. Garlic and onion sauteed in butter, more butter added, then flour (50/50 white/wheat), stirred for three minutes. Added water due to lack of proper stock, reduced for several minutes (nice and shiny), whole milk added and reduced (gorgeous), just before it was the consistency I wanted I added shredded cheddar cheese and stirred to melt then poured it all over my cooked pasta. DAMN DELICIOUS!!! Using a roux is definitely worth some more investigation and experimentation.
I want to go to bed now, if only my heart would slow down.
