I'll post what I have so far and maybe you can help me make it better!!
Chocolate Cupcakes Makes 12 to 15 cupcakes
1 1/2 cups unbleached white flour 1/3 cup unsweetened cocoa powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup sugar 1/2 cup vegetable oil - I used 1/4 cup oil and 1/4 cup melted semi-sweet chocolate chips 1 cup cold water 2 teaspoons pure vanilla extract 2 tablespoons vinegar
When I substituted the chocolate chips, i scooped them into a 1/4 cup and then put a little bit of oil in with them and microwaved that for like 45 seconds and stirred it up.
I think that I am wanting a richer chocolate flavor. Maybe I should add a bit more cocoa powder in place of the a bit of the flour? Or add 1/4 cup of Hersey's syrup instead of the oil/chocolate chip mixture.
