Preheat oven to 400F. Fill muffin tray with liners and spray liners with non-stick spray (my recipe also made a little extra batter, so I added that to my mini-loaf pan)
In a separate bowl, whisk together:
1 cup AP flour
1 cup whole wheat (or I used coconut) flour
1 teaspoon baking soda
1/2 teaspoon salt
Mix together:
3/4 cup brown sugar (or regular sugar)
1/4 cup vegetable/canola oil
Add 2 eggs, one at a time
Add 1 teaspoon vanilla extract
Stir in 1 cup homemade applesauce (ours happened to be cranberry-apple sauce, so these will be pink muffins!)
Measure 3/4 cup apple cider
Alternate adding flour mixture and cider, stirring well to incorporate
Stir in 1 chopped apple (we chose Golden delicious this time, but Granny Smith would be great too)
[If desired, you can mix together 2 tablespoons brown sugar and 1/2 teaspooon cinnamon as a topping]
Measure batter into muffin liners. Bake at 400F for 20-25 min.
