Hey ladies-I'm looking for some protein-rich breakfast bars/muffin type recipe for the kids. They eat a very carb heavy breakfast (cereal, pancakes/waffles, bagels) and do get some protein w/yogurt, bacon/sausage (occasionally) but Eli won't eat eggs and I feel like he burns through his energy reserves quickly in the morning. I was thinking I could still get them to eat muffins but maybe pack them full of good stuff. Only catch is that the "stuff" can't be obvious. They won't eat whole nuts, dried fruit..,but I could add nut butters and other puréed type stuff.
Any ideas?
