So, I've just spent the past four hours making food - not a veritable feast of multiple dishes, not a ginumgous batch of anything that will be used or eaten over the course of a month, or even a week... no, I've just spent almost half of my day making a single dish that will probably be completely devoured by the end of tomorrow (if I'm lucky for it to last that long).
This causes me to reflect on a few things:
1) I am freaking good cook. Like, damn good even.
2) I need to own a restaurant kitchen - not a restaurant, I'm not interested in feeding a bunch of whiny people who think they know more about food than I do or want to make up their own menu items or in general just irritate me while breathing my air. No, I need just the kitchen part of a restaurant so that I can spend the same amount of time as I just did making food but have the capacity to do it in large batches while having three other projects going on at the same time, all while using a dish space that lets me go through a sinkfull of dishes in ten minutes tops without putting much effort into the process.
3) Mushrooms are yummy, even if they are inordinately expensive (actually, the inordinately expensive ones are yummier)
4) If it wasn't for the fact that I could probably write a book about how horrible and demeaning it is to work in a restaurant, I'd say I should get paid for this stuff.
So what food extravaganza caused this random mulling and post? Toasted Mushroom Quinoa Pilaf with Italian Sausage, Fennel, Sun Dried Tomatoes, and Walnuts... Though I prefer to call it "Not Yo' Mama's Pilaf"
5) Damn good, I say.
