I completed the assignment for the DW public call. Is there a way to get my username off of the sign ups/assignments since it's done?

If you mean, can you take my name off the work now that it was posted, then the answer is yes. Orphaning etc, is allowed as long as the story remains in the collection. If you mean, can we delete your sign-up now that the exchange is closed, that's more complicated. It's technically possible, but we'd only consider it for very compelling reasons, because deleting your sign-up also deletes parts of the sign-up for the person who wrote for you.
