Living Gluten-Free

I have been living without gluten for more than 10 days now. My parents could find a nearby store where we can buy gluten-free bread. I have tried their cassava bread and their squash bread, but I didn't like them: they are too dry and heavy. I liked their carrot bread, though. My Mom has been baking tapioca and cornstarch tarts and other things like that. I've been eating tapioca flour biscuits instead of "normal" biscuits, and when I have to eat fast food, I eat "pão de queijo" (cheese buns made of cassava or corn flour).

So far, so good, but I haven't noticed any changes in my health. I feel like I'm in a dead-end, because... how can I prove that this diet doesn't work? The only way I can prove that is if I eat gluten-free for several months and then I have another dizzy spell episode. But this diet is very expensive, and I can't see the logic of it.
