I also wish I could have written that Snape/Voldemort/Harry I'd like to write to you, but I blame Voldemort ;-). He's such a unidimensional character, I don't think I can write him as I view him in canon. Maybe after book 7 is released I'll stop worrying about canon and go AU :P.
