A new recipe with both chicken and broccoli!

Anyway, break from translating to give you another recipe. This one's from a wok cookbook I got for my birthday, we made it for dinner last night and it came out very nice.


Chicken with sesame and peanuts
Serves 4, prep 10 minutes, cooking about 15 minutes

2 tblsp oil
2 tbslp sesame oil (I used all normal cooking oil)
500 g chicken breast, no bones or skin, in strips
250 g broccoli, in florets
250 g fresh mini-sweetcorn cobs (I used pickled ones and that came out ok too)
1 small red pepper, in strips
2 tbslp soy sauce
250 ml orange juice
2 tsp cornflour (I used normal)
2 tbslp sesame seeds, roasted
60 g peanuts, unsalted, roasted

Heat all oil in wok or very large frying pan until very hot. Brown chicken in this for 4-5 minutes.
Add broccoli, corn and red pepper, and fry for 1-2 minutes.
Meanwhile, mix soy sauce with orange juice and cornflour. Pour over chicken and veg, stirring constantly, until sauce thickens a bit.
Add sesame and peanuts. Stir well and continue cooking for 3-4 minutes.
Serve with rice or noodles.

I should say that our peanuts and sesame were not roasted, and the peanuts were *slightly* salted - the recipe calls for unsalted as soy sauce is quite salty already, but I thought it was fine with the salted ones. We served it with noodles and that was good. I'm sure you could put in different veg, and you could probably leave the nuts and sesame out too. Very easy to make indeed!
There are actually a lot of chicken recipes in this cookbook, I'll post them as and when we try them.

I love my wok! It was an unexpected wedding gift (meaning it wasn't on our gift list) from a friend who had just been studying in Thailand, and it is the gift we have had most use out of by far - almost every day for nearly four years now. In fact I'll probably be getting a new one at Christmas. Ours has stopped being non-stick.
