"Philly" Cream Chees Pie

Recipe: "Philly" Cream Cheese Pie
Souce: My mother (who presumably got it from the Philadelphia Cream Cheese package or advertisement
Serves: 8
Cook's Notes: This was the first "Cheesecake" I ever ate. Mom used to make it when I was a little kid, and strangely it's still my favorite. I wanted to make it for a post-funeral reception (the bereaved is known to love cheesecake), and hunted through Mom's stuff until I found the recipe. I don't want to lose it again!



Preheat oven to 350 degrees.

Crust:
12 to 14 graham crackers, crushed to fine crumbs
1/4 cup butter, melted

Combine and pat into a 9" pie plate to form a crust. Bake 5 minutes.

Filling:
12 oz. cream cheese
2 eggs, beaten
3/4 cup of sugar
2 teaspoons vanilla
2 Tablespoons lemon juice

Beat together all ingredients and pour into crumb crust. Bake for 15 to 20 minutes. Cool 5 minutes, then top with...

Sour Cream Topping
1 cup sour cream
3 Tablespoons sugar
1 teaspoon vanilla

Combine and spread on slightly cooled cream cheese pie. Bake 10 more minutes.

Remove from over, cool, then refrigerate at least five hours.
