So I start classes today. Going back to school is simultaneously odd and comforting, although I won't really know whether the next two years will be hellish or enjoyable until I've met my professors and done lab work with my fellow students.
Cheese of the week: La Tur, a pungent, soft Italian cheese. The cheese itself is a blend of goat, sheep and cow milks, and is quite earthy. It is best when spread on sweet Italian bread or paired with a fruity, full-bodied wine such as the 2004 Fransiscan Merlot. I would not recommend including La Tur on a cheese plate; while it is possible to choose cheeses and other condiments that won't clash with La Tur's flavor and aroma, a triple cream such as L'Explorateur makes a much more friendly addition.
