I found this recipe easy to make and very tasty. I have made it both as written, and without cutting the chicken breast into strips and increasing the cook time in step 2 to 25 minutes. Worked fine. This serves 2, but I have also doubled and tripled it in order to have leftovers with no problems. I like it because it is quick, easy, and I tend to have all ingredients on hand.
Ingredients:
1/3 cup all purpose flour
1/4 tsp cayenne pepper
10 oz boneless, skinless chicken breast, cut into strips
1 Tbsp butter
2 Tbsp lime juice
2 Tbsp honey
1 Tbsp brown sugar
1 tsp worcestershire sauce
1)In a large resealable plastic bag combine flour and cayenne pepper. Add chicken, a few strips at a time, and shake to coat.
2) In a skillet, brown chicken in butter on all sides
3) Combine the lime juice, honey, brown sugar, and Worcestershire sauce; pour over the chicken. Cook for 1-2 minutes or until the juices run clear and the sauce is thickened.
I usually make rice to go with this.
