senator_hatty has the same book. It's kind of the opposite of
Nigella Express. Where

The Cook's Illustrated American Test Kitchen Cookbook does long, involved recipes. At America's test kitchen, they basically take each recipe and do it 1039283 different ways. In the cookbook, they've detailed their processes, and laid out what went wrong and what went right. Then they present the finished product. They also have Science! sections that explain things like brining, and how and why they work. Since I've been unemployed, this has been great for me, and I have made some fantastic meals. Tonight, however, I outdid myself. I made the garlic rosemary roast chicken with pan-roasted potatoes, and wow. Steph said it is the best roast chicken she has ever had. And the potatoes were simply amazing.
Now if it only had a recipe for goat.
