Limes!

I've been doing a bit of cooking this weekend, despite my increasing clumsiness - for which I blame the steroids, of course! I bought a bag of cheap limes yesterday - 12 for $3, so was inspired to try making marmalade, something I haven't done for about 20 years.

I had a recipe in my battered old 70s English preserving book, & it looked pretty simple, if you allowed enough time. The limes had to be cut up thin & soaked overnight, then boiled for almost 2 hours to soften the peel, before adding the sugar and boiling rapidly to set.

Amazingly, I had no mishaps - apart from spilling fine white sugar all over the bench and stovetop when weighing it out. Given the opportunities for disaster if my clumsy attack struck (the wrists seem to lose strength/power at crucial moments), I was amazed that this, and the odd drip of marmalade on the towel under the jars, was the worst that happened. And that the marmalade set perfectly & tasted wonderful - the scrapings from the pan proved that!

I also made some Italian meatballs with good pork mince from the butcher & basil from my balcony, but as they're simmering in a pot, ther's no photo of them. I have enough for at least two more serves, tucked away in the freezer.
