Butterscotch Brownies, Special Diet

Wheat-free, soy-free, and minimally egged--yolks only.

1/4 cup butter, melted
1 cup brown sugar, packed
2 large egg yolks
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup broken nuts (I used toasted walnuts)
1/4 cup oat flour
1/2 cup rye flour

Beat butter and sugar together; add egg and vanilla and beat well. Add remaining ingredients all at once and stir vigorously. (Dough will clump up and leave sides of bowl.) Pat into greased 8x8 pan and bake at 350 for 20-25 minutes or until puffed and browned around the edges. Let cool at least to lukewarm before cutting.

I gave one of these to a neighbor and until I told him, he had no idea these were wheat-free.

ETA: I should explain that I posted this because my SO is allergic to wheat, egg WHITES, soy, sesame, peanuts and elder. Therefore, our food budget was hard hit when we could no longer have pasta, bread/rolls/biscuits, eggs (as breakfast, etc.), soy products (incredible numbers of foods), peanuts (likewise) or sesame. I'm posting some recipes as I develop them in the hopes that they might help others in the same fix.
