This morning, I had potatoes and eggs (and a few other things), and was hunting which of Eggplant's recipes I could use (or at least inspiration for what I could do based on what I had). Awesome, thanks! I'll probably be substituting meat for tofu, but these recipes sound great and easy and I nearly always have these ingredients on hand.
